Chop carrots as small as possible (preferably in blender) until they still have a bit of texture
Mix carrots with salt in a bowl
Let that sit for 20 minutes
Pour mixture in a clean dish towel and press the excess water out
Add eggs, flour, corn, pepper, and other spices if wanted
Mix
Heat up pan with a bit of olive oil
Form mixture into very thin patties
Fry for 5-10 minutes on a medium setting
Add a lid for 5 minutes to assure that the eggs are cooked
Take out and season to taste
